Cheddar Wafer

 

Ingredients

  • ½ cup unsalted butter

  • 2 cups grated sharp cheddar cheese*

  • 1 cup flour

  • ½ tsp. smoked paprika

  • ½ tsp. salt

  • ½ tsp. red pepper flake

  • 1 cup shelled Tastachios**

  • 1 beef bouillon cube, powdered

*Kerrygold White Cheddar

** (1) 8oz. bag or 4oz. shelled equals one cup

Directions

  1. In a bowl, combine flour, salt, smoked paprika, red pepper flake, and bouillon.

  2. In a food processor, pulse together the butter and flour mixture until thoroughly combined (Note layer flour, butter, flour).

  3. Gradually add grated cheese mixture one cup at a time, pulse until blended.

  4. Remove mixture and place in a bowl.

  5. Stir in Tastachios and turn by hand until evenly distributed and compacted.

  6. Place dough onto a lightly floured surface and divide in half.

  7. Shape each piece into a log about 1 inch thick.

  8. Wrap in plastic and chill until firm.

  9. Preheat oven to 350 degrees.

  10. Cut the chilled dough into 3/8 inch slices and place about ½ inch apart on a non-greased cookie sheet.

  11. Bake for 12 minutes until golden brown around the edges. (Optional, carefully flip after 8 minutes.)
